INGREDIENTS:

Rice:

  • 1 tablespoon olive oil

  • 1/2 cup basmati rice

  • 1 & 1/3 cups water

  • Salt & pepper to taste

Salmon:

  • 1 salmon or trout fillet, skinless ( approximately 200g )

  • 1 teaspoon Olive oil

  • Salt and pepper

Salmon Sauce:

  • 2 tbsp honey

  • 2 tbsp soy sauce (all-purpose or light soy sauce)

  • 1 tbsp white vinegar (or sub with any other vinegar except balsamic)

  • 1 large garlic clove (or 2 small), minced

Optional Garnishes:

  • Sesame seeds

  • Finely sliced chives or shallots/scallions

INSTRUCTIONS:

Rice:

  1. In a small saucepan, heat 1 tablespoon of olive oil.

  2. Add the rice and stir continuously until the rice becomes translucent.

  3. Season with salt and pepper to taste, stirring until the spices are evenly distributed.

  4. Add water and bring to a boil until the water starts to be absorbed.

  5. Before the water is fully absorbed, cover the pot with a towel and the lid, then reduce the heat.

  6. Cook for an additional 5 minutes with the lid on, or until the water is almost fully absorbed.

  7. Turn off the heat and let the rice stand in the pot for 2-3 minutes before serving.

Salmon:

  1. Take the salmon out of the fridge 20 minutes before cooking. Pat the salmon skin dry with a paper towel and season with salt and pepper.

  2. Whisk the Sauce ingredients together in a small bowl.

  3. Heat oil in a non-stick frying pan over medium-high heat (adjust if your stove runs hot). Place the salmon in the pan, cooking the first side for 1-2 minutes until golden. Flip the salmon, cooking each side for 30 seconds, then cook the other side for 1-2 minutes or until golden.

  4. Pour the Sauce over the salmon and cook for 1 minute or until it starts to slightly thicken. Check the side of the salmon to see how cooked it is in the middle; I prefer mine medium-rare. (Note 1). If the Sauce thickens too much before the salmon is cooked to your liking, add water 1 tablespoon at a time.

  5. Move to serving plates.

  6. Serve the salmon on top of the rice with the Sauce drizzled on top, and sprinkle with sesame seeds and chives/shallots if desired.


Recipe Notes:
1. Cook the salmon for 1-2 minutes on the first side and 1-2 minutes on the second side for a standard fillet approximately 2.5 cm thick at its thickest point. This timing will result in perfectly medium-rare salmon, with flesh that flakes easily, remains moist, and is coral-colored inside rather than pale pink or white.
2. Salmon is a fatty fish, making it more forgiving if slightly overcooked. However, when cooked perfectly, it is truly exquisite!
3. I determine how cooked a salmon is by observing its side. I prefer mine to be coral inside (rare to medium-rare), not pale pink and fully cooked. You can use a thermometer for accuracy. Insert it into the thickest part; it should read 120°F / 50°C for medium-rare or 130°F / 55°C for medium.
4. Keep in mind, the salmon will continue to cook for a minute after being removed from the pan.
