Quinoa, often hailed as a superfood, is packed with protein, fiber, and essential amino acids, which are crucial for sustaining energy levels throughout the day. This salad can be customized with a variety of fresh vegetables, herbs, and dressings, allowing you to tailor it to your taste preferences while maximizing nutritional benefits.


This easy quinoa salad is a vibrant, healthy option that’s perfect for students on the go. With minimal prep time and a variety of flavors, it’s sure to become a staple in your meal rotation!

INGREDIENTS:

  • 100g uncooked quinoa

  • 150g cherry tomatoes, halved

  • ½ cucumber, chopped

  • ¼ small red onion, finely chopped

  • ½ avocado, chopped

  • 40g feta, crumbled (optional, but it's a good source of protein)

  • Small handful of parsley (optional)


SIMPLE DRESSING:

  • 1½ tbsp olive oil

  • Juice of ½ lemon

  • 1 tsp honey

  • 1 tbsp soya sauce

  • Salt

  • Black pepper


COOKING INSTRUCTIONS:

  1. Rinse the quinoa under cold water.

  2. Cook it according to the packet instructions until tender.

  3. Drain if needed and let it cool for a few minutes.

  4. Meanwhile, chop the tomatoes, cucumber, onion, and avocado.

  5. Mix the olive oil, lemon juice, honey, salt, soya sauce, and pepper in a small cup.

  6. Put the quinoa and vegetables into a bowl.

  7. Pour over the dressing and mix gently.

  8. Crumble the feta over the top if you want

  9. Add parsley if using


Thea's Tip:
1. Cook extra quinoa while you’re already using the saucepan. Keep it chilled in the fridge and tomorrow’s lunch is almost ready before you start.

Why it works for students:
1. It is fresh, filling and useful for meal prep. One batch can become dinner tonight and lunch tomorrow.
2. It also needs only one saucepan and a chopping board.
Budget Tip:
Avocado is optional. If it is expensive that week, leave it out rather than buying it just for one recipe.
Easy Swap:
No feta? Use a little grated cheddar, or simply leave the cheese out.
