Fasting orange cake

A soft and tender orange cake that’s bursting with fresh orange flavour. This everyday orange cake recipe is easy to make and only gets better over time.


It’s a simple recipe with amazing results, its vegan and ideal for fasting!!!


There’s nothing quite like a little something sweet to accompany your afternoon coffee (at least for me, anyway) and I think an orange cake is just perfect when paired with coffee.

INGERDIENTS

For the butter

  • 1 1/2 cup flour

  • 1 cup sugar

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup orange juice

  • 1/3 cup vegetable oil

  • 2 Tbsp orange zest

  • 1 Tbsp vinegar

  • 1 tsp vanilla


For the syrup

  • 1 cup water 

  • 1 cup caster sugar

  • 1  orange cut in quarter slices

DIRECTIONS

For the syrup:

  1. Place the water, sugar and the slices of 1 orange cut in quarters

  2. Simmer for 5-10 minutes or until the sugar is dissolved and the syrup has thickened. Set aside to cool.

For the butter

  1. In a large bowl, whisk together dry ingredients

  2. in a small bowl stir wet ingredients together

  3. Stir wet ingredients into the dry ingredients, stirring until combined

  4. Pour into pan OR separate the butter into 12 paper cupcake cases

  5. Work quickly as the baking soda and vinegar give the cake height

  6. Bake at 175 C for about 25-30 minutes if you do cupcakes and 35-40 minutes if you do a whole cake

  7. Let cakes cool completely before pouring 1-2 Tbsp of the cold syrup on to the cakes (dissolve the syrup it a bit with some water)

  8. Decorate with the caramelised orange slices

Notes
1. You can serve slices of the cake with your favourite ice cream.
2. The slices of the candied oranges along with some of their syrup will make every bite
