Mum's Lemon Chicken

My Mum's Lemon Chicken and Potatoes is a timeless recipe that's simple to prepare in a single roasting pan.


It includes succulent, tender roasted chicken and crispy golden potatoes, enhanced with tangy lemon and fragrant herbs.


This one-dish meal features bone-in, skin-on chicken thighs roasted with buttery gold potatoes, all topped with a lemony sauce.

An easy recipe that's a proven hit with just 5 ingredients, and it's one of my favorites.



INGREDIENTS

  • 4 bone-in chicken thighs

  • 3 medium potatoes, peeled and quartered

  • ½ cup freshly squeezed lemon juice

  • ½ cup olive oil

  • 1 tablespoon salt

  • 1 teaspoon freshly ground black pepper

  • 2 cups chicken broth, divided

  • 1 teaspoon lemon zest

  • 1 teaspoon dried oregano






DIRECTIONS

  • Gather all ingredients and heat the pan with the olive oil

  • Roast the potatoes and put aside

  • Roast the chicken turning both sides until golden brown.

  • Add the potatoes and stir until blended together

  • Add chicken broth, lemon juice, salt, pepper and lemon zest

  • Toss until chicken and potatoes are evenly coated

  • Cook in a low temperature for 30 minutes covered

  • Toss chicken and potatoes, then place chicken skin-side up

  • Continue cooking for 20 more minutes or until the juices are thicken

  • Transfer potatoes to the platter with chicken

  • Strain pan juices into a measuring cup and pour over chicken and potatoes

  • Sprinkle with fresh oregano (OPTIONAL)

  • Serve and enjoy!


Notes:
I marinate the chicken in olive oil, salt, pepper, and dried oregano ahead of time (overnight if possible) for a flavourful weeknight dinner or a lively Mediterranean meal ideal for entertaining.
