My Mum's Lemon Chicken and Potatoes is a timeless recipe that's simple to prepare in a single roasting pan.
It includes succulent, tender roasted chicken and crispy golden potatoes, enhanced with tangy lemon and fragrant herbs.
This one-dish meal features bone-in, skin-on chicken thighs roasted with buttery gold potatoes, all topped with a lemony sauce.

An easy recipe that's a proven hit with just 5 ingredients, and it's one of my favorites.

INGREDIENTS
4 bone-in chicken thighs
3 medium potatoes, peeled and quartered
½ cup freshly squeezed lemon juice
½ cup olive oil
1 tablespoon salt
1 teaspoon freshly ground black pepper
2 cups chicken broth, divided
1 teaspoon lemon zest
1 teaspoon dried oregano


DIRECTIONS
Gather all ingredients and heat the pan with the olive oil
Roast the potatoes and put aside
Roast the chicken turning both sides until golden brown.
Add the potatoes and stir until blended together
Add chicken broth, lemon juice, salt, pepper and lemon zest
Toss until chicken and potatoes are evenly coated
Cook in a low temperature for 30 minutes covered
Toss chicken and potatoes, then place chicken skin-side up
Continue cooking for 20 more minutes or until the juices are thicken
Transfer potatoes to the platter with chicken
Strain pan juices into a measuring cup and pour over chicken and potatoes
Sprinkle with fresh oregano (OPTIONAL)
Serve and enjoy!
Notes:
I marinate the chicken in olive oil, salt, pepper, and dried oregano ahead of time (overnight if possible) for a flavourful weeknight dinner or a lively Mediterranean meal ideal for entertaining.
