Quattro formaggi pie (another version of Kypriaki tyropita)

Although Kypriaki Tyropita (halloumopitta), is normally made with halloumi cheese, a mixture of cheeses can be combined and trust me the outcome is awesome.


My quattro formaggi pie version of Kypriaki tyropita has halloumi of course but I combine it with feta cheese, myzithra and blue cheese.


This wonderful cheese mix and mint pie is baked in a ring tin and has sweet and savoury flavours in it.

The variety of cheeses to use is endless: halloumi, feta cheese, graviera, kefalotyri, blue cheese myzithra, anthotiro or any cheese you have at home and you fancy to use.

INGREDIENTS:

  • 1 cup grated halloumi cheese

  • 1 1/2 cup combination of smashed feta, myzithra and blue cheese

  • 6 large eggs

  • 1 cup milk

  • 3/4 cup vegetable oil

  • 6-7 tbsp dried mint or 1 cup fresh mint, finely chopped

  • 2½ - 3 cups of self-raising flour

  • 2 teaspoons of BP

  • 100 g raisins (optional)

  • sesame seeds for sprinkling (optional)


INSTRUCTIONS:

  • In a big bowl whisk the eggs (no mixer required), add the grated cheese, the oil, milk, dried mint (be generous with it), raisins (optional) and the flour

  • Mix for a few minutes until all the ingredients are well combined

  • Grease and flour a 22 cm (8 3/4 inch) Bundt form or a 26 cm round baking tin

  • Pour in the mixture, sprinkle with sesame seeds and bake in a preheated oven to 180o C for about 50 minutes to one hour until the crust is golden brown



Notes:

1. The amount of flour is between 2 1/2 - 3 cups, depending on how big your eggs are.
2. Just make it as the texture of a cake and also bake it as a cake. When a toothpick comes out clean, then it’s ready.         
3. You can bake the mixture of the cheese pie in individual molds. It's ideal for parties.
