Pasta tricolore

Well, enjoying a really tasty food from time to time is not a crime after all, and this dish is the perfect cheat-day meal. This cheesy pasta tricolore and bacon is undeniably a delicious and satisfying dish!

Pasta is a kind of food that can be cooked in so many different ways and ingredients that could be a light and nutritious meal or a very fattening one. Either way its a delicious and satisfying dish.
This specific dish, despite the fact that it seems unhealthy, it is not. The pasta is not drowned in sauce yet every bite is perfectly balanced!

INGREDIENTS
for the pasta
1 package tricolore spiral pasta
1 vegetable cube
1tsp salt
1500 ml water
for the sauce
30gr unsalted butter
2 tomatoes cut in cubes
10 slices of bacon cut into strips
200 gr grated cheese mix (use any cheese or combination of cheese you like)
salt and pepper
for the creamy topping
350 ml milk
100 ml fresh cream
4 eggs
salt and pepper

INSTRUCTIONS
Cook pasta according to package directions. Drain and keep warm
Heat the olive oil in a large frying pan
Add the bacon and sauté for 2-3 minutes
Lower the heat to medium-low and add the chopped tomatoes
Season with freshly ground pepper and salt according to your taste and cook for 5-7 more minutes
Mix with the cooked pasta and leave to cool
When the pasta is cool add the grated cheese and transfer to an oven tray (e.g pyrex)
Beat the eggs, milk, fresh cream, salt and pepper and pour on top of the pasta cheese mix and stir gently
Bake in the oven at 180 C degrees for 45 - 60 minutes
Serve immediately
RECIPE TIPS
GIVE IT A TWIST
1. Add some fresh basil for extra flavour
2. Pump up the tomato taste, by tossing in a few chopped sun-dried tomatoes
3. This recipe also works well with other types of pasta like farfalle or penne
